South of the Border

Ingredients:
12 corn tortillas
1 pound ground beef
1 onion diced
1 jar of Salsa Verde Salsa
1 can red enchilada Sauce
1 can diced fire roasted chilles
8oz grated cheddar cheese
8 oz grated jack cheese

preheat oven to 350  You will also need a 9x13 baking dish. 

mix together the Salsa Verde Salsa and the Enchilada sauce in a skillet.  Using the enchilada sauce can, add one can of water.  Stir and heat on medium until just beginning to simmer.

Brown your ground beef.  Drain and add the onion.  Cook until the onions are beginning to turn opaque. Add the fire roasted chilles.

Add approximately half the sauce to the meat. Stir to combine.  (I tend to add just under half the sauce.)

Using tongs, dip a corn tortilla into the sauce and lay it in the bottom of the 9x13 pan.  I layer 6 on the bottom of the pan, slightly overlapping.

Add meat sauce on top of first layer of tortillas.  Add jack cheese on top of this.

Layer the last 6 tortillas, dipped into the sauce on top of jack cheese.

Pour the rest of the sauce on top of the tortillas.

Add cheddar cheese.

Bake for 20-30 minutes or until the cheese is bubbling.

We like to serve this with sour cream on top!  This should make enough for 4-5 adults.

OPTIONS:
Add a can of corn to the meat mix.  Or just layer it on there after the meat.
Try different cheeses.  I used a three cheddar mix once and my family loved it.
Use mild sauces/salsa for less kick, or medium or hot sauce for more!
Use pepper jack cheese for a little more kick as well.



Steel Cut Oatmeal

4 cups water
1 cup steel cut oats
salt to taste
other things to flavor it up

Bring your water to boil.  Add your cup of oats.  Add your salt.  I say to taste because I don't measure it.  I just sprinkle it in  Stir it up and let it boil at a full boil for 2-3 minutes.  Once the foamy stuff rises up, bring it down to a simmer.  I then set my timer for 26 minutes.  You will have to play with yours a bit though.  The box says 30-35.  If I let mine go for 30, it gets burnt and crusty on the bottom.  Stir it once half way through your cook time.

Now's the fun part!  Add in whatever you want! My kid's favorite is to add some brown sugar and whole milk to it.  I like a small bit of butter, brown sugar and a tablespoon of cream.  Okay... maybe 2 Tbls of cream.  :)  Grandma adds cinnamon, brown sugar and soy milk.  

Another favorite for me is to peel and dice an apple before cooking.  I add the apple in at the very beginning and let it cook with the oats.  Then when it's in my bowl, I add a bit of cinnamon, regular sugar (or I mix it before even) a dash of nutmeg (fresh is amazing if you have it!) and some butter and cream.  It is SO good this way!

Another yummy variation is some butter, some cream, and a dollop of strawberry jam.  I did this with my fresh homemade strawberry jam and it was delicious!  It was way better than the Quaker Strawberries and Cream.  Just saying.

Refrigerate any leftovers and warm them up in the microwave within a few days.  :)


Homemade Tomato Soup 



Ingredients:

2 cans stewed tomatoes with basil and oregano
1 medium onion chopped fine
3 TBLS butter
1 tsp parsley flakes or a small handful of fresh cut parsley
1 can tomato paste (the small ones.  6oz I think.)
4 cloves of garlic either sliced or minced
salt to taste
1 cup Orzo pasta or other small pasta
pepper to taste
water
1 packet of artificial sweetener, or 2 TBLS of sugar

Melt butter in bottom of a large soup pot.  Add onion and cook until just beginning to brown.  Add parsley and garlic.

Add the stewed tomatoes.  Don't worry about them being big.  They will cook down.  Add 3 cans of water.  Add salt and pepper to taste.  Add tomato paste.  If your soup seems really thick at this point, add another can of water from the tomato paste can.  Bring this all to a boil.  Add pasta.

Reduce heat and simmer for about 20 minutes.  Add artificial sweetener (I use Splenda) or sugar.  Add more salt if necessary.

Simmer at least another 10 minutes.  You can actually let this simmer on an extremely low heat with a lid just cracked on top for up to 2 hours at this point.  You can always add a tad more water if it boils down a little too much.

Enjoy!  Add Parmesan cheese on top if you would like!

We like to serve this with a side of grilled cheese sandwiches.  :)
